A Recipe To Share Today

Today I have a recipe to share. I can't remember where I found this one but I tried it for the first time yesterday and it is a keeper. They bake up very pretty and are nice and moist. Hope you enjoy them too.

Peanut Butter Chocolate Chip Muffins

2 1/4 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

2/3 cup firmly packed brown sugar

6 tablespoons butter, melted and cooled

1/2 cup peanut butter (chunky or smooth)

2 eggs

1 cup milk

3/4 cup semi-sweet chocolate chips (miniature is best)

In large mixing bowl, whisk together the flour, baking powder, salt and brown sugar. In medium bowl, whisk together butter, peanut butter, eggs and milk until smooth. If the peanut butter is in clumps within the liquid that is fine, it works out in the end. Pour liquid mixture into flour mixture and mix just until combined. Fold in chocolate chips. In paper lined muffin tins fill 2/3 full. Bake in preheated 375 degree oven for 17-20 minutes.

Oh, I better not make these. Chad just lost 30 pounds....he'd gain it back in a week if he knows these are in the house. Thanks for sharing!

These are very good. I liked the way they baked up with a nice mound. Tasty too. Valerie you'll have to hide them from Chad, just give them to the kids. Anne, I'll have these out at F. M. so you can see them.
